Cakes at work!
Got summoned to make a sponge cake for 300 people for the President’s leaving ‘party’ at work.
In the end it was two separate cakes, make of two tiers sandwiched with jam and covered in fondant. Each layer consisted of over 2lbs of flour sugar and butter each! it took 5kg of icing to cover them.
I’m happy with how they came out, nice and moist and light and I managed to get the icing on all in one sheet with no holes or tears!

Methinks it didn’t like my emphasis on “and”, and decided to nuke the rest of it. At any rate, I meant to say …rolling it out that large and at a consistent thickness, and without any “windows” (super thin-stretched areas that you can see the cake through, but haven’t torn) is a hell of a feat.
