Chocolate Cherry Brandy Truffles
I had a hankering for truffles, but while doing a good job of resisting the urge to go shopping and make them, I was convinced that it was a fabulous idea.
Had some Cherry Bounce to use (Brandy that’s had Cherries soaking in it) and some of the brandy soaked Cherries (very very potent!)
Started by heating up a carton of cream and then adding about 500g dark chocolate and stirring it until it was melted. Take off the heat and stir in enough Bounce to taste. Chop up some of the cherries (I found cutting each one in half, and then each half into about nine gave good sized pieces) and stir in.
Leave in the fridge until >really< firm and then roll out into balls. Chill the balls as they will have become slightly sticky and melted during handling.
Coat in something! I chose dark chocolate on some and white chocolate on the reast. Can use cocoa powder, icing sugar, chocolate sprinkles.. whatever you want

I think I need more practice with getting them to a consistent size, and when dipping them getting them smoother all over. The white chocolate ones have too much of a puddle beneath them, they also melted the truffles too much and so got streaks of dark chocolate through them
You must be a lucky girl to have someone make a gift to you of Cherry Bounce and the bounced cherries. *grins* I hear tell it was imported from the Southern U.S., made by hand and lovingly transported at great personal risk or life, limb and leakage.
The truffles look fantabulously delicious. And the streaks in the white chocolate ones are a “feature” not a “mistake”. *grins*
