Victoria Sandwich
6oz Butter
6oz Sugar
1 Egg
Milk As Needed
6oz Flour
Temperature 350F/180C
Grease and line two 8″ 1″ deep tins
Cream together the butter and sugar until pale and fluffy.
Beat in the egg then fold in the flour.
Add milk until dropping consistency.
Split between the two tins and spread out.
Bake until pale golden.
Once cool sandwich together with jam and buttercream, or fresh berries and whipped cream.
