Chaud-frois that I made at college. It’s an old fashioned way of presenting things (mainly meat and fish) for buffets. The item is cooked, then covered in a bechamel that has gelatin added. The decorations are added, made from aubergine, peppers and cucumber skins. They’re then covered in aspic jelly!

Cheesecake..

The most fantabulous amazing cheesecake, and so easy to make.. Ok, maybe my presentation needs a little work, but it tastes damn good. A packet of chocolate cookies and butter for the base. Lots of melted chocolate, 3oz sugar, 200g Marscapone, 200g yoghurt and a carton of lightly whipped cream for the topping. Awesome!
