Not a Cake!

Chaud-frois that I made at college.

It’s an old fashioned way of presenting things (mainly meat and fish) for buffets.

The item is cooked, then covered in a bechamel that has gelatin added. The decorations are added, made from aubergine, peppers and cucumber skins.

They’re then covered in aspic jelly!

The chocolate still needs trimming off round the bottom to make it neater.. surprisingly easy to make…

Line a tin

Melt ~500g of toffee and pour into the tin.

Add a layer of wafer (the ones you can get for icecream)

Make some buttercream and mix with peanut butter, put half into the tin and cover with more wafer.

Add the rest of the buttercream and the final layer of wafer.

Melt ~250g chocolate and pour in. Put in the freezer overnight to set.

Turn out

Melt ~1kg of chocolate and mix in some rice crispies. Pour over the bar and leave to set

Trim off the excess and enjoy!

I decided to have a go at making croissants, it didn’t go too badly.. I think there was a misprint in the recipe that asked for 100g of yeast!

The dough was too soft I think and the butter just squished out of it when it was being rolled. And then I didn’t get it thin enough when rolling so they turned out monstrously huge!

All in all not too bad for a first attempt, they’re nice.. more like a danish than a croissant, but not too bad…

Cheesecake..

The most fantabulous amazing cheesecake, and so easy to make..

Ok, maybe my presentation needs a little work, but it tastes damn good.

A packet of chocolate cookies and butter for the base.

Lots of melted chocolate, 3oz sugar, 200g Marscapone, 200g yoghurt and a carton of lightly whipped cream for the topping.

Awesome!

Anyway.. I am, if you didn’t know already, going to South Africa in October, and I want to raise money for that trip

Hot Cross Buns

They worked! This year they actually worked!

Okay I overcooked them a little so they’re a little crisp on the outside.. but they worked!

Hot Cross Buns

1 tbsp dried yeast (I used a sachet)

100ml warm water

1lb plain flour

1 3/4oz demerera sugar

milk

1 tsp salt

1 egg

1oz softened butter

2 tsp spices

3oz dried fruit

eggwash (egg and sugar)

flour and water

Mix the yeast with water and a small amount of flour, cover and leave for 30 mins – this depends on the type of yeast you’re using, with sachets it makes little difference.

Put everything except the milk in a mixer with dough hooks and mix.

Add milk til it’s the right consistency

Knead til smooth

Cover and leave

Roll into balls (8-12) place on a greased sheet and leave

Eggwash and add crosses

Cook at 230C for 10 minutes then 170C for 15-20 mins

Enjoy!

Honeycomb

I found an absolutely awesome recipe for honeycomb…

4 tbsp Sugar

2 tbsp Golden Syrup

2 tsp water

1 tsp Bicarbonate of Soda

Dissolve everything except the bicarb in a pan and boil for 7 minutes

Remove from heat and stir in the bicarb

Quickly transfer to a lined tin and leave to set

It’s amazing, quick and easy, and no need for sugar thermometers

On the downside I still can’t find a good recipe for fudge :(
